My super soup Sunday recipe this week is

Creamy leek and potato

and booy, it did not disappoint! 🔥

A warm soup is exactly what we needed in this windy and rainy weather 🌧️

This recipe is a body warmer and super silky smooth family favorite

Recipe

• 4 leeks
• 6 smallish potatoes
• 1 tsp Very Lazy Food easy garlic
• Chicken stock
• Salt and pepper to taste
• 60ml Single cream

Method

1. Slice the leeks and dice the potatoes into small chunks.
2. Add oil to the pan and sweat for 5 minutes.
3. Add the garlic and continue to cook for 2 more minutes.
4. Add the potatoes, stock, salt and pepper.
5. Bring to a boil and then turn down the heat and simmer for 30 minutes.
6. Blend until smooth and mod in cream.
