I love this chicken hot pot recipe for one specific reason!
What’s the reason you ask…That reason being that it was purely using #theleftovers from our #crockpot paprika chicken last night 😍 It is the perfect #midweekmeal ! A family favourite for sure. This one was approved by my husband before it even went in the oven!
Garlicy, creamy…heavenly! It was packed full of flavour and veggies. The recipe would work with any #leftover meat and veggies. What you see in the recipe below is what I found in my fridge from christmas.
Ingredients
🥕 2 large carrots
🥕 1 large leek
🥕 1 small onion
🥕 2 medium potatoes
🥕 Approx 1/2 left over roast chicken
🥕 350ml chicken stock
🥕 2 tablespoons chicken gravy granules
🥕 Black pepper and garlic to season
Method
- Roughly dice all of the veg, save the potatoes for later.
- Add the veggies to a saucepan with 1 tablespoon butter and allow to fry gently for 5 minutes.
- Chop up your #leftover chicken. Add the stock and gravy granules to the veg and bring to boil.
- It will thicken almost instantly. Mix on all of the chicken and season to your preference.
- Pour the filling into a deep oven proof dish.
- Thinly and evenly slice the potatoes and layer up on top of the chicken mix.
Baked for 20 minutes at 200c.
