Tuscan Style Salmon Recipe
Fish for me, is one of those ingredients which I have always had a love, hate relationship with. 80% of meals I cook with fish, I had a tendancy of not enjoying but I kept on going. Every so often out comes a new recipe to try and this is one of the very first I can honestly say I enjoyed cooking and eating! We both had empty plates tonight!
Full of flavour and busting with colour. My version of Tuscan Salmon includes spring greens, chilli and lots of tomato 🍅
Recipe:
2 salmon fillets, skin on
2 tsp butter
1 onion, finely diced
80g spring greens or spinach
300g chopped tomatoes
1 tbsp tomato puree
2 tsp chopped garlic @verylazyfooduk
100ml chicken or veg stock
Salt and pepper to taste
1 tsp paprika
1/2 tsp chilli flakes
1 tsp dried herbs if choice
Method:
1) Melt 1tsp butter and the oil. Place the salmon skin side down in the front pan and cook for 4 minutes on a medium heat until the skin is crispy.
2) Sprinkle over the paprika, chilli flakes, black pepper and salt. Gently flip and continue to cook for 3-4 minutes. Remove from the pan.
3) Gently fry the onion and garlic to soften. Add the spring greens and wilt down. Mix in the chopped tomatoes, stock, puree, salt and pepper. Reduce down for 10 minutes.
4) Add the salmon back in and continue to cook until heated through.
5) Serve with veggies and sides of choice.
