Cheese & Onion Pie Recipe

Today’s home bake was a traditional Cheese & Onion Pie, traditionally using Lancashire cheese but I tweaked my recipe to use a strong cheddar which is my fave ๐
Buttery and crisp pastry, oozing with a rich cheese and onion filling is a right belly filler! This recipe is definitely a cloud pleaser!
Recipe
๐ง 250g plain flour
๐ง 100g butter
๐ง 100ml cold water
๐ง 250g cheddar cheese
๐ง 1 large onion
๐ง 2 eggs ๐ง Salt and pepper to taste
Method
1) Peel and finely dice the onion. Place in a saucepan with 4 tbsp of cold water and cook for 10 mins on a low heat to soften.
2) Meanwhile, to produce the pastry, in a bowl rub together the flour and butter to produce fine bread crumbs.
3) Add cold water, 1 tbsp at a time and mix to form a soft dough. Cut off 1/3 of the pastry dough and reserve for later.
4) Roll out the pastry and line the pie dish.
5) Mix together the grated cheese, 1 egg, the softened onion and seasoning. Fill the pie dish and evenly spread.
6) Roll out the reserved 1/3 of pastry large enough to fit on top of the pie. Whisk the second egg on a bowl and use a brush to line the edge of the pastry in the tin. Lay the pie lid on top and press down to seal.
7) Using a sharp knife, trim off the excess dough. Glaze the whole pie with the egg and make 3 small slits in the centre to release steam.
8) Bake for 25 mins until crispy and golden.
