Crispy Homemade Roasties Recipe

This post excites me. Roast potatoes are one of my all time favourite foods! Such a cheap ingredient which can be crispy, fluffy, awesome!

As a kid and still now, a Sunday roast or Friday Night Dinner, my plate was filled full of some crispy roasties. I’m definitely that girl that would happily eat a plate of fluffiness topped with gravy, don’t worry about passing me the meat or veggies ๐Ÿ˜‚

Over the years I’ve definitely trialled, tested and tasted A LOT of roast potato recipes and I finally have perfected it for my family ๐Ÿ’• The only thing that changes in this simple potato recipe is the seasoning that I mix up now and then – Rosemary & Garlic, Paprika, Chicken Salt Seasoning, Simply Salt & Pepper ๐Ÿ˜ talking about these are simply making me want a plate and yes, it is only 10:30am!

Recipe:

๐Ÿฅ” 4-6 medium potatoes
๐Ÿฅ” 2tbsp flour
๐Ÿฅ” 3-4tbsp oil ๐Ÿฅ” Seasoning of choice

Method:

1) Peel and chop the potatoes into desired size.

2) Add 3tbsp oil onto a baking tray and preheat in the oven at 200C.

3) Bring the potatoes to a boil and parboil for approx 10 minutes until the outer layer of the potato has softened but the inner is still hard.

4) Drain the potatoes and add the flour. Shake gently to coat the potatoes in the flour and to carefully rough up the edges without breaking the remaining potato.

5) Remove the baking tray from the oven and carefully lay the coated potatoes in the hot oil. Drizzle over the remaining 1tbsp of oil.

6) Shake over seasoning of choice and bake for 40 minutes at 200C, turning half way.
