Cornflake Chicken Bites & Rainbow Couscous Recipe
This is exactly the type of meal you want to have on your weekly dinner plan when it’s scorching hot outside ๐
With a quick prep time and a super fast cooking process, it simply means you don’t have to spend too much time melting in the kitchen!
This is also such a great recipe to get the kids involved too – crushing, dipping, chopping.
Recipe:
โ๏ธ 100g couscous
โ๏ธ 150g chicken or veg stock
โ๏ธ 1 chicken breast
โ๏ธ 2-3 tbsp plain flour
โ๏ธ 1 egg
โ๏ธ 1 tsp of each – garlic, paprika, black pepper
โ๏ธ 50g cornflakes
โ๏ธ 3 salad vegetables of your choice
Method:
1) Place the couscous into a bowl and pour over the stock. Mix well and leave for 10 minutes.
2) In a food bag, using your hands, gently crush the cornflakes into fine pieces. Add to a bowl and mix in the garlic, paprika and black pepper.
3) Slice the chicken into strips and line up a bowl of flour, a bowl of egg (whisked) and the cornflakes.
4) Firstly, dip the chicken in the flour, then the egg and finally into the cornflakes. Place on a baking tray and repeat the process until you have used all of the chicken.
5) Bake the chicken at 180c for 15-20 minutes until cooked through.
6) Meanwhile, dice up all of your salad vegetables. Using a fork, fluff up the couscous and add in the vegetables. Mix well. Add a sprinkle of black pepper to taste.
7) Serve the cornflake chicken with the couscous and your favourite dipping sauce. Enjoy x
