Chinese Style Chicken & Sweetcorn Soup Recipe

Boom ๐Ÿ’ฅ This recipe is the definition of home cooked Chinese takeaway, you wouldn’t be any the wiser ๐Ÿ‘€

I’m sometime a little sceptical when trying out new fakeaway recipes but in all honesty, it’s now my go to soup recipe! So simple and so tasty! Next time I’m going to go all out and make up a whole fakeaway with sweet and sour chicken and egg fried rice ๐Ÿ˜

Recipe:

๐Ÿฅ„ 2 chicken stock cubes (make upto 1 litre)
๐Ÿฅ„ 1 shredded cooked chicken breast
๐Ÿฅ„ 1 can sweetcorn (semi-blended)
๐Ÿฅ„ 2 eggs
๐Ÿฅ„ 2 spring onions
๐Ÿฅ„ Soy sauce
๐Ÿฅ„ 1 tbsp cornstarch

Method:

1) Bring the stock to a gentle simmer.

2) Add the chicken and corn. Mix well.

3) Whisk the eggs and drizzle into the soup using a fork.

4) Add 50ml boiling water to the cornstarch and mix into the soup. Bring to boil to thicken.

5) Slice the spring onion and mix into the soup.

6) Serve in a bowl and drizzle over soy sauce. Enjoy!
