Turkey Hot Pot Recipe

Not your typical sundayroast but at least it does include turkey, veggies and potatoes 🥰

Turkey hot pot using leftovers to minimise waste 🍗 I used a handful of veggies that I had in the fridge, so use what ever you have too!

Ingredients

🥕 3 large carrots
🥕 1/2 large onion
🥕 6 mushrooms
🥕 3 medium potatoes
🥕 Left over slow cooked rolled turkey breast
🥕 2 tbsp chicken gravy granules
🥕 350ml chicken stock
🥕 Garlic, herbs, pepper to taste

Method

  1. Roughly slice and dice the mushrooms, onion and carrots.
  2. Add to a saucepan and gently fry for 5 minutes to soften.
  3. Add the stock and continue to simmer for 5 minutes.
  4. Roughly chop the turkey and add to the veg.
  5. Mix in the gravy granules and it will thicken in a couple of minutes.
  6. Transfer to an oven proof dish and layer with sliced potatoes.
  7. Cook for 30 minutes at 180 degrees C.
