Homemade Mini Toad in the Hole Recipe
Tonight’s recipe was a real heart felt and homely meal. I decided to serve my minis with roasted sweet potato, buttered cabbage and tenderstem broccoli. It was honestly delish!
And of course, the gravy! Don’t worry I didn’t forget, you simply can’t forget gravy and there were no granules in tonight’s (take a look at the cheats gravy recipe below). I came across the recipe on @bbcgoodfood and it matched with the toads so well. I made a couple of tweaks here and there but perfection 👌
Recipe:
8 sausages
3 eggs
150ml plain flour
150mp mill
1 tsp Dijon mustard
1 tsp garlic
Salt and pepper
For the cheats gravy:
500ml beef stock
3tsp red onion marmalade or chutney
Squirt of ketchup
Splash of soy sauce
1 tsp mustard
1tbsp flour to thicken
Method:
1) Cut the sausages into three and place 3 pieces in each muffin tin. Bake for 15 mins on 200c.
2) To make the batter, measure the flour in a jug. Crack in the eggs and whisk. Gradually whisk in the milk until the batter is a smooth consistency. Season with garlic, salt, pepper and mustard.
3) Remove the sizzling sausage from the oven and pour over the batter until 2/3 full. Return to the oven for Qt minutes until well risen and golden.
4) To make the gravy, add all of the ingredients into a saucepan and whisk thoroughly on a medium heat until thickened.
5) Pour the gravy over the toads in the hole and enjoy!
