Jammy Cornflake Tart Recipe
Another northern classic was produced today and we love it! ๐
I can’t believe a year ago, I’d never even tried a Jammy Cornflake Tart. Shocker, I know! Life is so much more content in Manchester with a cornflake tart in it ๐
Recipe:
For the shortcrust base
๐ฏ150g plain flour
๐ฏ75g butter
๐ฏ6 tbsp cold water
For the topping
๐ฏ125g raspberry or strawberry jam
๐ฏ100g cornflakes
๐ฏ25g brown sugar
๐ฏ125g golden syrup
Method:
1) Rub together the butter and flour until fine bread crumbs. Add the cold water, 1 tbsp at a time and mix into a soft dough.
2) On a floured surface, roll out the dough until a desired thickness and large enough for an 8inch tin.
3) Line the baking tin with the pastry and trim the edges. Line with parchment paper and fill with baking beans. Bake at 180c for 10 mins, remove the beans and bake for an additional 5 mins until golden.
4) In a saucepan, melt together the butter, syrup and sugar.
5) Mix the cornflakes and syrup mix together until fully coated.
6) Remove the base from the oven and evenly spread jam over the bottom. Add the cornflake topping and press out to the edges.
7) Bake cornflake tart for 5 minutes until crispy and golden.
