Homemade Pineapple Ice Cream Recipe
I know pineapple ice cream won’t be in everyone’s top five flavours of ice cream. But for me, it’s right at the top at number 1 ๐ฆ
Creamy, fruity and refreshing. Pineapple ice cream memories for me stretch back to when I was a kid and a local ice cream parlour used to sell it. I fell in love ๐ and when I decided I was making homemade ice cream, my flavour was a no brainer. PINEAPPLE OF COURSE!
This basic ice cream recipe can be adapted to suit your favourite flavour too and did I mention that you don’t need a Churn’?! Just a container and space in your freezer ๐
Recipe:
300ml double cream
397g condensed milk
1/2 tsp vanilla
200g chosen fruit – fresh or frozen or favourite ice cream flavour
Method:
1) Whisk the double cream until soft peaks in a large mixing bowl.
2) Add the condensed milk and continue whisking for a further 3 minutes until stiff peaks are formed. Mix in the vanilla
3) If using fruit: in a saucepan cook your chosen fresh to frozen fruit over a medium heat until they disintegrate. If using chocolate: chop up into chunks.
4) Push your fruit could through a sieve to remove any seeds.
5) Mix the fruit or chocolate into your cream mixture gently. Either mixing it fully or swirling through.
6) Add any additional ingredients of choice: crushed meringue, lemon curd, chocolate chips, caramel.
7) Carefully spoon the mixture into a freezer proof container and place in the freezer for 5+ hours until set.
