Chocolate Babka Recipe

This recipe has been on my ‘TO BAKE’ list for a while now since we have been in lockdown.

Being someone who doesn’t enjoy eating cake, this is the next best thing in my opinion! For those of you who have never heard of babka before, it is a sweet yeast dough filled with fudgy chocolate and twisted together. I even topped mine with a streusel topping ๐Ÿ˜ Honestly, so delicious!

In all honesty, this isn’t a quick 10 minute recipe. It definitely takes time and patience – a perfect babka simply can not be rushed โฐ

If you don’t fancy chocolate, you can swap it up for a Cinnamon flavoured babka instead!

This recipe is enough to make 2 chocolate babkas, as you can see though I split the dough and made a traditional Jewish challah as well. Just in time for Friday night dinner tomorrow ๐Ÿ‘

Recipe:

– For the dough –
1 cup warm water
1tsp yeast
2 tbsp honey
3.5 cups strong bread flour
1tsp salt
1/4 cup oil – For the chocolate spread –
200g dark chocolate
1/2 cup butter
1 cup icing sugar
40g cocoa – For the streusel –
1/2 cup flour
1/4 cup sugar
1/2 cup oil

Method:

1) Mix together the warm water, yeast and honey in a small bowl or jug.

2) In a mixing bowl, add the flour, salt and oil. Gradually pour in the yeasty water and mix well to form a soft dough.

3) Knead the dough for 20 minutes and then place in the bowl, cover and allow to prove for 1 hour 30 mins.

4) Melt the butter and chocolate together. Add the icing sugar and cocoa until smooth.

5) Split the dough in two. Roll out into a rectangle and cover with half of the chocolate mix.

6) Roll up the chocolate filled dough into a sausage. Slice all the way through, lengthways.

7) Pinch the dough at one end and twist the two strands together. Place in a lined loaf tin.

8) Using a fork, mix the streusel ingredients together until a crumb. Top the babka and bake for approx 20-25 mins at 180c
