Berry Meringue Kisses Recipe
These meringue kisses are definitely all pretty in pink! A light and fluffy centre with a delicious crunchy outer ๐
There is truly so many colours and flavours you can tweak these too but I went with raspberry and they have honestly made the perfect little dessert snack – eat them as they are, crush them into an Eaton mess, top a cup cake with them. The possibilities are endless.
This is a great recipe to get the kids involved too – Whisking, weighing and measuring, piping ๐ช๐
Recipe:
75g caster sugar (@tateandlylesugars
75g icing sugar
3 eggs
2tsp strawberry or raspberry jam (I used @hartleysfruit)
1 drop red food colouring (@asda
Method:
1) Preheat the oven to 120C or 100 fan.2) Mix the two sugars together into a small bowl.
3) Sperate the eggs and whisk the whites until still peaks.
4) One spoon at a time, add in the sugar and continue whisking until glossy and shiny. This should only be a couple of minutes.
5) Mix together the red food colour and jam. Fold over the icing bag and brush three strips of flavouring all the way to the ends.
6) Fill the piping bag with whisked egg whites. Twist the top to seal and cut off the end for a diameter of approx 1cm.
7) Apply pressure of the icing bag to form a base on the lined baking tray and then lift to flick. Repeat until all meringue mixture has been used.
8) Bake for 1 hour, then turn the oven off and slightly open the door. Allow to cool in the oven.
