Caramel Cookie Cups Recipe

Today’s bake was definitely spontaneous and for relaxation – it wasn’t for a cooking class or for anyone else, it was simply FOR ME. I just didn’t want to sit around in front of the TV for much longer.

Baking is such a stress release. I’ve always loved it and for as long as I can remember, if I didn’t feel 100%, out came my baking staples! ๐Ÿ’™

I actually had some inspiration from @janespatisserie for this bake. Her bakes are AMAZING and for a while now I’ve wanted to try a recipe. So when the caramel cookie cups popped up on my feed earlier on, I was like it’s time to bake! (Even though I only had half of the ingredients, with a little tweak here and there, I was set to go!). And booooy…they did not disappoint! Just Wow!! Here’s my take on caramel cookie cups and I hope you enjoy baking ๐Ÿ’•

Recipe:

300g plain flour
1 tsp baking powder
110g butter
150g caster sugar
1 egg
1 tsp vanilla
100g milk chocolate
30g dark chocolate
1 tin condensed milk
Handful butterscotch sweets

Method:

1) Mix together the flour and baking powder.

2) In a seperate bowl, melt the butter and sugar together. Whisk until well combined.

3) To the butter mix, crack the egg and mix well. Add the vanilla and mix.

4) Chop all of the chocolate into small rough pieces.

5) Add the flour and chocolate into the butter mix and mix well to form a soft cookie dough.

6) Divide the dough into 1/3 and 2/3 approx.

7) Divide the 2/3 dough into 9 ball and place in a deep muffin tin. Use the end of the rolling pin to make a cup.

8) Heat the condensed milk in the microwave for 2 mins. Mix well and heat for another 2 mins. Add the butterscotch sweets and heat for 1 minute. Mix well and heat for a final 1 minute.
9) Add a tablespoon of the caramel mix into each cup.

10) Using the final 1/3 chunk of dough. Divide between 9. Roll into balls and flatten in the palm of your hands. Place on top of each cookie and pinch the edges to seal.

11) Bake for approx 15 mins until golden. Serve with caramel or chocolate sauce and a scoop of ice cream!
